Miami Firefighter Retires - 30 Years of Service

PCS Events had the pleasure of working with Mr Steve Brodie in planning a final farewell dinner at the station in honor of his many years of service to the Miami community. The men on-duty joined Mr. Brodie in a formal dinner with several passed hors d'oeuvres, Rosemary-Garlic Aged Tenderloin of Beef and Broiled Lobster Tails. The meal would not have been complete with out the music of a harpist that played throughout the evening. Many commented that all of the fireman should host a similar event for their last shift. I must agree that it is more than well-deserved.

PCS Events would like to say Congratulations and Thank You to Mr.Steve Brodie for his dedication and commitment to our Miami public safety.

Due to a greater emphasis on education and careers, many couples are marrying later and often have their households established before moving on to marriage. Special Event & Wedding Up Lighting

Up Lighting is a subtle splash of light, usually colored, on the perimeter of walls. This is not to be confused with wall washing which turns walls into one solid color. Tone down the house lights and the room takes on a rich, warm, comfortable and romantic atmosphere.
Lighting can be used in a variety of ways. It can define a given area, entrance or art piece. It can create a given mood or bring out a particular theme.

Traditional stage up lights use a bulb and a colored gel to create the effect desired. They come in a variety of colors...amber, cherry red, fucshia, cool blue, lavender, green and many others. The up lights are positioned against the base of walls and shine upward creating a wonderful splash of color, placed every few feet as the room takes on this wonderful tinge, including existing sconces and chandeliers.

Led up lights utilize three color “eyes”, red, green and blue and from the mixing of these colors a myriad of colors are possible. LEDs can also be changed easily by a lighting controller, and can even fade into one color after another. A lighting tech is always on hand to alter colors if needed. The LEDs are also placed on the perimeter of the walls. LEDs require very little wattage. Sometimes we recommend this type of lighting if the facility’s electrical power is limited. A bit more expensive than the stage up lights, we still offer led up lighting combined with some stage up lights at a very reasonable rate. Again, the emphasis with PCS Events is to have enough up lights to create our unique and recognizable up lighting experience for a true WOW effect!

Wedding Ceremony Seating

There always seems to be a bit of confusion regarding this subject so I thought I'd provide a basic guide....

Christian Wedding

At a formal Christian wedding or large civil ceremony, the bride's family and friends are seated on the left and the groom's on the right. The first few rows should be marked off with flowers or ribbon as seating for immediate family and special guests. Ushers should seat guests as they arrive, from front rows to back. Once the ceremony is about to begin, the final guests to be seated are, in this order: grandparents, mother of the groom (with father walking just behind), and the mother of the bride.

Tip: Remember to leave room on either side for flower girls or ring boy's that will take a seat once they walk down the aisle. Seat them with someone they are close to and feel comfortable with. This is especially important for long ceremonies.

Jewish Wedding

At a traditional, formal Jewish wedding, the bride's side is on the right and the groom's is on the left. The parents stand under the chuppah during the ceremony; step-parents may stand under the chuppah if they are very close to the bride or groom.

Palmetto Bay Village Center Wedding

These days weddings seem to be more and more intimate but this couple's wedding grew by the minute. We started out with 90 guests and ended joyfully celebrating with 150 friend and family members. Thankfully, their venue was perfect for transitions and for accomodating the group. Congartulations to Mr & Mrs. Saldivia!

The Palmetto Bay Village Center's Palm Room can accomodate up to 500 guests!!! Adjacent to Biscyane National Park, the Lakeside Terrace, Colonnade and Palm Room Balcony offer a series of sweeping waterfront terraces that create the perfect setting for any special event. The atrium (shown above) is ideal for a cocktail. Combined the various special spaces that The Palmetto Bay Village Center offers are suitable for 50 to 1000 guests.

Halloween is a great holiday for a big bash. With so many themes and types of Halloween parties to choose from, your event can be filled with Halloween treats for the kids and family, or mixing up Halloween cocktails for the adults and friends. PCS Events offers fun ideas to make your treats sweeter and your home Halloween Party Spooktacular!!!!

The Witches Cauldron

No Halloween Party is complete without a witch’s cauldron. Tie 3 long sturdy branches together. Then hang a scooped out pumpkin filled with dry ice from the center. You’ll create a fabulous steaming effect!

Special equipment:

1 large Pumpkin (cauldron)

1 punch bowl that fits inside the cauldron

1 plastic hand sterilized in hot water

1 block dry ice

The Witch's Brew

1 (6-ounce) package lime gelatin

2 cups boiling water

3 cups chilled pineapple juice

1 (2 liter) bottle chilled lemon-lime soda

3/4 cup Sour Apple Pucker

2 cups chilled Vodka

Directions

Pour the gelatin mix into a large bowl. Slowly stir in the boiling water. Stir at least 2 minutes, until the gelatin is completely dissolved. Stir in the pineapple juice. Let cool to room temperature.

Wearing heavy duty gloves or using tongs, place the block of dry ice in the bottom of the cauldron. (Dry ice will burn skin, so handle it with gloves and tongs and keep it away from kids and pets!)

Use an ice pick to break the block into smaller chunks, if necessary.

Fill the cauldron with just enough water to cover the dry ice. It will begin to "steam."

Place the punch bowl inside the cauldron, on top of the dry ice. The cauldron will appear to be magically smoking.

Entrap the sterilized rubber hand between the cauldron and the punch bowl, squeezing it tight so the hand appears to be reaching out of the mist for help. Hot-glue the hand to the cauldron, if necessary, to hold it in place.

Carefully pour the drink mixture into the punch bowl. Slowly add the chilled vodka, Apple Pucker and lemon-lime soda. Stir gently to mix.

A celebration of the history, culture, and contributions of Americans whose ancestry originates from Spain, Mexico, The Caribbean, Central America, and South America. September 15th marks the independence day of Costa Rica, El Salvador, Guatemala, Honduras, and Nicaragua; the independence day of Mexico, Chile, and Belize also fall within the first week.

Our featured recipe, Paella Valenciana, is from Spain where the Hispanic culture originated.

Paella Valenciana is probably the most famous and popular Spanish dish around the world. It originates in Valencia, a region on the Mediterranean coast of Spain, between Barcelona and Murcia that is known for its rice dishes.

Prep Time: 45 minutes

Cook Time: 60 minutes

Total Time: 105 minutes

Ingredients:

• 1 yellow onion, diced

• 2 medium tomatoes, diced

• 1 whole chicken or 8 chicken drumsticks

• 1 1/2 lbs pork loin (fat trimmed), cut into ¾ inch pieces

• 1/2 lb calamari (squid) cleaned and sliced into rings

• Medium grain or "pearl" rice *

• 4-6 cups chicken broth

• 1 large pinch Saffron

• 1 1/2 lbs raw mussels in shell (frozen or fresh)

• 1 lb small clams (frozen or fresh)

• 1 1/2 lbs raw shrimp, medium or large - shell on

• 1 red pepper seeded and sliced

• 1 10 oz. pkg frozen peas

• Olive Oil, Salt to Taste

Preparation:

* The exact quantity of rice will depend on the size of the pan, so have at least 1 lb of rice on hand.

This seafood paella recipe makes approximately 12 servings.

Before you start preparing paella, it's best to check you have all ingredients and gather the equipment that you'll need.

• 17 inch (144cm) paella pan

• Round charcoal BBQ

• Medium sauce pan

• Sharp knife for chopping meat and vegetables

• Meat cleaver (if you use a whole chicken)

• Aluminum Foil or Large Tea Towel to Cover Paella

Cut the Chicken and Pork into Serving-Size Pieces - You'll need one whole chicken, cut into serving-size pieces or 8 chicken drumsticks. If you use a whole chicken, use a meat cleaver to cut the chicken into pieces small enough to easily mix while sautéing.With a sharp knife, cut the pork into 3/4" pieces.

Clean the squid and remove the tentacles. Make sure to remove the innards and the "spine" and discard. Then, cut the squid into rings.

Tip: Try to buy fresh squid whenever possible. If fresh squid is not available, look for packages of squid in the frozen food section. The squid should NOT have batter or coating on them, since that type is used for frying.

Slice red pepper and chop onions and tomatoes, set aside. Now that you have the ingredients cleaned and chopped, it's time to start the BBQ and begin cooking. When the coals on the BBQ are covered in white ash, cooking can begin. Assemble all the ingredients on a table near the BBQ, so that you can stay in the area and monitor the cooking. Place the paella pan on the grate and add enough olive oil to coat the bottom and allow the pan to heat up. When hot enough, sauté the onions and tomatoes in the olive oil. Add olive oil as needed to prevent sticking. Once the onions are translucent, add the chicken and cook, stirring constantly – about 15 minutes. Add pork and squid and cook, stirring often. Add the rice, sprinkling in the form of a large cross on the pan. (Have approximately 1 lb of rice on hand for this.) Stir for 2-3 minutes to thoroughly coat the rice with oil and mix with the other ingredients. Add saffron threads to the chicken broth and stir. Slowly pour broth into pan until pan contents are covered. Spread ingredients evenly over bottom of pan. Arrange mussels around outside edge of pan, pointing up. Place clams and shrimp in pan, distributing them evenly around the pan. Add slices of pepper on top. Allow to simmer, cooking rice. Add more broth if necessary. (If fire becomes too hot, raise the pan up, away from the heat.) When rice is almost cooked, sprinkle peas over the pan. When rice is cooked, remove from heat and cover with aluminum foil or large tea towel, allowing paella to “rest” for 5 to 10 minutes before serving. Slice lemons into wedges and serve.

Florida has the third largest population of Hispanics in the nation, with close to 4 million residing in the state. Twenty and a half percent of Florida's population is Hispanic!!! At least 60% of Hispanics reside in Palm Beach, Broward, Miami-Dade, and Monroe counties.
